“Egg Salad”-Style Tofu Spread

Whenever I make this for lunch I always think, “I should make this more often.” It’s a pleasant change-of-pace spread that can be served on fresh bread or, better yet, stuffed into pita.

Ingredients

1 pound soft or medium-firm tofu
1/3 cup soy mayonnaise
1 to 2 teaspoons prepared mustard, or to taste
1/2 teaspoon good-quality curry powder, or to taste
1 large celery stalk, finely diced
Salt to taste

Preparation

  1. Step 1

    Using your hands, finely crumble the tofu in a serving bowl.

    Step 2

    Combine the mayonnaise, mustard, and curry powder in a small bowl and stir together. Pour over the tofu and add the celery. Mix well, season with salt, and serve.
