Ingredients

1 tablespoon light olive oil
2 medium green or red bell peppers or 1 of each
2 to 3 scallions, sliced
1 pound soft tofu, drained and crumbled
1 teaspoon salt-free herb-and-spice seasoning mix
Salt and freshly ground pepper to taste

Preparation

  1. Step 1

    Heat the oil in a large skillet. Add the peppers and sauté over medium heat until they are just beginning to be touched with brown spots.

    Step 2

    Add the remaining ingredients and cook over medium heat, stirring frequently, until everything is heated through, about 5 minutes, and serve.
