Burgos de Mayo

Cinco de Mayo actually marks the 1862 Mexican victory over the French, not Mexican Independence Day, as some believe. Thanks to Madison Avenue, it’s a holiday more enthusiastically embraced north of the border than south. To celebrate this semicorporate affair, grilled Burgos de Mayo combine all our favorite Mexican flavors (including the tequila) on one bun. Top them off with Mayo de Mayo, our Cinco “special sauce.”

Ingredients

For the Burgers

1 1/2 pounds ground chuck
1/2 pound chorizo, cooked and crumbled
2 tablespoons tequila
1 tablespoon fresh lime juice
1/2 teaspoon garlic salt
6 slices pepper Jack cheese

For the Mayo de Mayo

3 tablespoons mayonnaise
3 tablespoons salsa
3 tablespoons chopped fresh cilantro
3 tablespoons sliced green onions
1 1/2 teaspoons chili powder

For Serving

6 large hamburger buns, toasted
Iceberg lettuce leaves

Preparation

  1. Step 1

    COMBINE the meats, tequila, lime juice, and garlic salt in a mixing bowl. Form the meat into 6 patties.

    Step 2

    COOK as directed for Cheater Kitchen Burgers (page 119). During the last minute or two of cooking, top with cheese.

    Step 3

    COMBINE all the sauce ingredients in a small bowl.

    Step 4

    PLACE the burgers on the buns and serve with Mayo de Mayo and lettuce.
