Caramelized Banana Cake

Caramelized bananas are such a traditional tapas dessert that we had to find an easier way to serve them to a crowd. You’ve heard of pineapple upside-down cake. Well, why not try it with bananas?

Recipe information

  • Yield

    serves 24

Ingredients

1/2 cup butter, softened
1 1/2 cups granulated sugar
3 eggs
2 teaspoons vanilla
1 cup milk
1 teaspoon salt
4 teaspoons baking powder
2 1/2 cups flour
1 cup firmly packed brown sugar
3 bananas

Preparation

  1. Step 1

Preheat the oven to 350°F. Lightly coat a 9 by 13-inch baking pan with butter or cooking spray.

    Step 2

Place the butter and granulated sugar in a large bowl and stir until smooth. Add the eggs and stir for 2 minutes. Add the vanilla and milk and stir until combined. Add the salt, baking powder, and flour and stir until completely smooth.

    Step 3

Sprinkle the brown sugar evenly in the bottom of the pan. Cut the bananas into 1/4-inch-thick slices and arrange them over the brown sugar. Pour the batter over the bananas and bake for 35 to 40 minutes, until the center of the cake springs back when lightly pressed. Immediately place a cutting board or baking sheet over the cake and invert. Cool completely, cut into squares, and serve on small plates.
