    If they’re just starting to fall apart, try turning down the heat under them. A steady simmer is what you’re aiming for. Boiling can cause dumpling disintegration. If it’s already too late, rescue the bits from the pot (you may have to scrape some from the bottom) and transfer them to a paper towel–lined colander. Press them to make dry bits. Pile in a buttered dish, cover loosely with foil, and bake for 20 minutes at 350°F. Serve them as baked dumplings, perhaps with a flavorful sauce.

    Did you peek? Next time, let the dumplings cook undisturbed. Drafts of air will deflate some dumplings. If you can’t stand the suspense, invest in a pot with a glass lid.
