1 1/2 tablespoons finely chopped shallot
2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1/2 lb summer lettuces such as baby red oak, Bibb, and baby romaine (12 cups total)

    Whisk together oil, shallot, lemon juice, salt, and pepper in a large serving bowl.

    Just before serving, add lettuces to dressing and toss to coat.
