Green Chilies Cheese Casserole—How Simple Can it Get?

Just combine ingredients (the canned green chilies are already seeded and diced), and pop into the oven. This “Mexican quiche” will be ready to please in but 25 minutes. If you like things hot and spicy, add a dash of your favorite salsa.

Ingredients

6 large eggs
4 cups grated sharp cheddar cheese
Two 4-ounce cans diced green chilies

Preparation

  1. Preheat the oven to 350 degrees. Crack the eggs into a large bowl and beat. Add the cheese and green chilies. Mix, pour into a 9-by-13-inch baking dish, and spread evenly across the dish. Bake for about 25 minutes, until the casserole has set and lightly browned. Cut into 6 squares and serve.
