Green Goddess Dressing

Ingredients

1 cup mayonnaise
1 cup fresh parsley leaves
1 scallion, coarsely chopped
1 tablespoon fresh tarragon leaves
1 tablespoon white-wine vinegar
1 garlic clove
2 anchovy fillets or 1 1/2 teaspoons anchovy paste (optional)

Preparation

  1. In a food processor, combine the mayonnaise, parsley, scallion, tarragon, vinegar, garlic, and anchovy fillets or anchovy paste. Process until the mixture is smooth and creamy.
