Mocha Chip Cupcakes

Moist mocha cakes with dark chocolate chips, these nutritious yet decadent sweets are equally well suited for a post-workout snack or for a party with Vegan Chocolate Frosting (page 92).

Ingredients

1/4 cup coconut flour
1/4 cup unsweetened cocoa powder
2 tablespoons decaf espresso beans, finely ground
1/4 teaspoon sea salt
1/4 teaspoon baking soda
2 large eggs
1/2 cup agave nectar
1/2 cup dark chocolate chips (73% cacao)

Preparation

  1. Step 1

    Preheat the oven to 350°F. Line 8 muffin cups with paper liners.

    Step 2

    In a large bowl, combine the coconut flour, cocoa powder, ground espresso, salt, and baking soda. In a medium bowl, whisk together the eggs and agave nectar. Blend the wet ingredients into the coconut flour mixture with a handheld mixer until thoroughly combined, then stir in the chocolate chips.

    Step 3

    Scoop 1/4 cup of batter into each prepared muffin cup.

    Step 4

    Bake for 23 to 28 minutes, until a toothpick inserted into the center of a cupcake comes out with just a few moist crumbs attached. Let the cupcakes cool in the pan for 1 hour, then frost and serve.
