Ingredients

2 tablespoons olive oil
1 onion, chopped
8 ounces mushrooms, sliced
2 cups canned low-salt chicken broth
1 cup orzo
3 tablespoons pine nuts, toasted
2 tablespoons minced fresh parsley

Preparation

  1. Heat oil in heavy large saucepan over medium-high heat. Add onion and mushrooms and sauté until golden brown, about 10 minutes. Add broth and bring to boil. Stir in orzo.
