Jason Cobler, the lead bartender of Harvest in Louisville, Kentucky, shared this recipe with Epicurious. Inspired by the Mint Julep, this is a lighter cocktail that will get you going the day after the Kentucky Derby.

Ingredients

3 fresh mint leaves, plus more for garnish
10 drops Meyer lemon bitters, such as Brooklyn Hemispherical*
3/4 ounce freshly squeezed lemon juice
1 ounce Rok Hill Farms Bourbon or Blanton's
Sparkling wine such as Prosecco

Preparation

  1. Step 1

    In a cocktail shaker, muddle the mint leaves with the bitters and lemon juice until the mint is slightly darkened but not completely crushed. Add the mint simple syrup and bourbon. Add about a half cup of ice and shake vigorously until well chilled, about 30 seconds.

    Step 2

    Strain drink into a Champagne flute, top with sparkling wine, and garnish with a mint leaf.
