Peach Ginger Smoothie

When I was a kid, nothing could compare to hearing the jingling bells of the ice cream man; it meant I got a Creamsicle. Looking for that taste again and to create something kids would adore, I came up with this recipe. One note: If you have a sensitive mouth or throat issues, omit the ginger to avoid irritation.

    makes 4 1/2 cups

Ingredients

1 1/4 cups peach nectar
3/4 cup organic plain yogurt
1 teaspoon minced fresh ginger
3 cups frozen peaches, or 3 cups fresh peaches, pitted and chopped
1 tablespoon finely ground flaxseeds
1 1/2 teaspoons maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon freshly squeezed lime juice

Preparation

  1. Step 1

    Combine the peach nectar, yogurt, ginger, and half of the peaches in a blender and process until smooth. Add the remaining peaches, the flaxseeds, maple syrup, vanilla, and lime juice and blend until smooth and creamy. Serve immediately.

    Step 2

    Add 1 tablespoon of unrefined virgin coconut oil for additional healthy fat and calories.

    Step 3

    For more protein, add a scoop of whey protein powder.

    Step 4

    Store in an airtight glass container in the refrigerator for 2 days.

    Shake well again before serving.
