Ingredients

1 15–ounce can tomato sauce, divided
2 large eggs
1 1/2 teaspoons dried sage, divided
1 teaspoon salt
3/4 teaspoon coarsely ground black pepper, divided
1 1/4 pounds lean (15% fat) ground beef
1 12–ounce roll breakfast sausage
1 1/2 cups chopped onion
1 1/2 cups chopped green bell pepper
1/2 cup finely crushed crackers (such as Ritz)
2 large garlic cloves, minced

Preparation

  1. Preheat oven to 350°F. Whisk 1/2 cup tomato sauce, eggs, 1 teaspoon sage, salt, and 1/2 teaspoon pepper in large bowl. Add ground beef, sausage, onion, bell pepper, cracker crumbs, and garlic; blend well. Pack mixture into 9x5x3–inch loaf pan. Mix remaining tomato sauce, 1/2 teaspoon sage, and 1/4 teaspoon pepper in small bowl; pour over meatloaf. Bake meatloaf until thermometer inserted into center registers 160°F, about 1 hour 10 minutes.
