Simple Horseradish Cream Sauce

This rich sauce adds cool heat to Friday Night Steak Sandwiches (page 188), Crispy Fried Oysters Four Ways (page 117), and Foster Family’s Pot Roast with Herb-Roasted Vegetables (page 199).

Ingredients

1/2 cup sour cream
1/4 cup prepared horseradish
2 tablespoons heavy cream
1 teaspoon hot sauce, such as Texas Pete or Tabasco
1 teaspoon fresh rosemary
Sea salt and freshly ground black pepper

Preparation

  1. Combine the sour cream, horseradish, heavy cream, hot sauce, and rosemary in a bowl and stir to combine. Season with salt and pepper to taste and refrigerate in an airtight container until ready to serve, or for up to 4 days.
