Smashed Yukon Gold Potatoes with Shiitake-Miso Gravy

  1. Step 1

    Simply bake or microwave as many good-size Yukon gold potatoes as you need (allowing one whole or half potato per serving), until tender. Leaving them in their jackets, cut each potato in half, smash lightly with a potato masher, and serve hot with freshly made Shiitake-Miso Gravy (page 217).
