Ingredients

1/4 cup butter
1/2 cup sliced yellow onion
1/4 cup chopped green bell pepper
1 clove garlic, minced
1/2 teaspoon dried oregano

One 10 3/4-ounce can tomato soup
Salt and ground black pepper to taste
1/4 cup grated Parmesan cheese

Preparation

  1. Melt the butter in a large skillet over medium-high heat. Add the onion, bell pepper, garlic, and oregano. Sauté until the onion is translucent, 2 to 3 minutes. Stir in the zucchini and soup.
