HIGH FIBER BREAD MACHINE BREAD

  1. You will need a large bread machine-2lb setting
  2. As a diabetic I have found this bread has a very minimal effect on my blood sugar. It is a recipe I created so I could have yummy bread that was also good for me.

    3 dozen rolls or two medium loaves

Ingredients

1 cup skim milk
1 cup water
4tbsp sugar
2 tbsp olive oil margarine (I like Fleishmans)
1 cup bread flour
21/2 cups whole wheat flour
3/4 cup wheat bran
1/4 cup flax seeds
1/4 cup old fashioned rolled oats
4 tbsp gluten
1 tsp salt
2 tsp bread machine yeast

Preparation

    1. Place first 4 ingredients in bottom of bread machine mixing container

    2. Place remaining ingredients on top. Place yeast in last.

    3. Set bread machine on "dough" cycle.

    4. Once dough is completed, remove from container, punch down, and form into loaves or rolls, or some of both. It is your choice. This recipe can make one medium loaf and a dozen and a half rolls.

    5. Set in a warm place and allow to rise until double in bulk.

    6. Bake in 370 degree oven for 10 minutes, then turn oven down to 350 and bake until done. Approxiate 30-40 minutes. Bread when it is done should have a hollow sound when tapped and golden brown top.

    7. Remove to cooling rack. Baste top of bread or rolls lightly with olive oil margarine to ensure soft crust.
