VEGETARIAN SPLIT PEA SOUP

Finally found the one I can't get enough of.

Ingredients

1 lb. split peas
1 small onion, chopped
1 clove garlic, chopped
2 carrots, sliced
2 stalks of celery, sliced
1 bay leaf
several sprigs of fresh thyme tied together
2 cans vegetable broth
3 cups water
salt and pepper to taste
1/4 c. chopped parsley

Preparation

  1. Heat all ingredients together in a large kettle, and simmer for 45 minutes or until peas are very tender. Add boiling water as needed during cooking, and about 1/2 tsp. salt and 1/8 tsp. pepper when almost tender. When done, add parsley, remove bay leaf and thyme and puree half of soup in a blender. Stir into remainder.
